POLISH LAZANKI (ŁAZANKI) RECIPE

Łazanki (lazanki), is a popular Polish dish consisting primarily of pasta, fried cabbage or sauerkraut, and mushrooms.
However, by definition, it is actually a Polish, Belarusian, or Lithuanian type of pasta made from thinly rolled dough that is cut into triangles or rectangles. Once boiled and drained, in Poland we usually mix lazanki with fried or sour cabbage, meat (such as sausage or otherwise), and/or mushrooms. Oftentimes, however, other pasta shapes are used, so long the remaining ingredients and flavors remain the same.
In Poland, we don’t eat meat on Christmas Eve. A meatless version of lazanki is often eaten as one of the twelve dishes we traditionally serve. The recipe below describes 2PhatPhucs‘ version of Christmas Eve (meatless) lazanki. Nevertheless, meat, such as sausage and/or bacon, can be added.
Although Christmas Eve lazanki may be made with dried mushrooms, our recipe uses fresh ones. Also, we have used 2 TSP of Vegeta All-Purpose Seasoning, which have discussed in detail in a previous post (link here). However, feel free to use salt and pepper instead.

INGREDIENTS:
- 16 oz chopped mushrooms (we used babybellas)
- 1 LB sauerkraut
- 1 large chopped onion
- 4 cloves of garlic (chopped or minced)
- 1 cup of red wine (we use merlot)
- 2 TBS vegetable oil
- 1 TBS butter
- 2 TSP Vegeta -OR- salt, pepper, cumin (amount combined)
- 2 TBS soy sauce
- 1 box of bowties pasta
DIRECTIONS:

Clean and finely chop 1 large onion.

Clean and finely chop or mince 4 cloves of garlic.

In a large pot or pan, heat up 2 TBS of vegetable oil. Once heated, add chopped onion and garlic. Stir. Add 1/2 cup of red wine. Cook on medium heat stirring frequently for about 7 minutes.

Meanwhile, put sauerkraut in a strainer, and rinse in cold water for a minute to get most of the acid out. Let drain well.
Start cooking bowties pasta.

Clean and chop mushrooms. In a medium saucepan, heat 1 TBS of butter. Once the butter has melted, add the mushrooms.

Add 1 TSP of Vegeta All-Purpose Seasoning. Alternatively, add half TSP of salt and pepper.

Add 1/2 cup of red wine. Stir well. Cook for about 7 minutes (until the mushrooms are cooked throughly and most of the liquid evaporated), stirring frequently.

Meanwhile, chop the sauerkraut.

Add the chopped sauerkraut to the pan with onions. Stir well.

Add 1 TSP of Vegeta All-Purpose Seasoning. Add 2 TBS of soy sauce. Stir well.

Pour the mushrooms into the pot with the onions and sauerkraut. Stir well. Add cooked bowties pasta. Stir well. Remove from heat, cover, and allow to sit for at least 10 minutes before serving so the flavors blend.
